Rules for operating an electric fryer

What is a deep fryer?

If you touch on the name, it comes from the French word frit, which means fried in a lot of oil. Many people love fast food for the dishes prepared in this popular appliance. A deep fryer is a device whose main task is to fry a product in a large volume of hot vegetable oil or animal fat. There are different types of equipment on the market that may have a lid, two cooking compartments, and so on. Refined sunflower oil is most often used for deep frying, but you can also use corn, cottonseed, olive and others.

Deep fryer device

The design of this device includes:

  • oil container;
  • heating elements;
  • protective housing;
  • thermostat.

When describing what a deep fryer looks like, we note that some models may contain additional elements, for example, baskets for lowering food, indicators, timers, and so on. The oil bowl is made of high quality heat-resistant metal. Modern fryer models have a display that displays basic information, and if it is touch-sensitive, you can use it to select different programs.

Operating principle of a deep fryer

To start using the device, turn it on and fill the bowl with oil. Then set the required temperature and cooking time, if there is a timer. Deep frying begins after pressing the "Start" button. The heating element heats up, which increases the temperature of the oil. When the required level is reached, the products are lowered into the bowl.

Additional features

Most modern fryer models have additional controls and features that make using the device much easier. For example, a removable deep frying bowl, making it easier to replace; a thermostat that helps maintain a constant oil temperature; air and oil filters; timer with sound signal to help control cooking time. There are designs of household deep fryers that have rotating inclined bowls, in which during cooking there is continuous mixing of deep-frying products, due to which the same amount of product is cooked in a smaller volume of deep-frying.

Pros and cons of an air fryer

In order not to be disappointed in the purchase, it is recommended to familiarize yourself with the advantages and disadvantages of the device in advance. A deep fryer for home has the following positive aspects:

  • the dish is prepared in a short time;
  • you can control the freshness of the oil;
  • design safety;
  • oil and steam can be filtered;
  • economical oil consumption;
  • The device is compact.

The deep fryer also has a number of disadvantages:

  • cannot be used continuously;
  • if there is no thermostat, the oil overheats, which is harmful;
  • the absence of a filter spoils the quality of the oil;
  • high price of modern models.

The device has decent power - as much as 2,000 W, the capacity of the oil tank is 3 liters, and the fryer is quite efficient. With its help, you can prepare delicious dishes with a crispy crust within a few minutes. It is very convenient to use the product: the control panel is intelligently understandable, there are LED indicators responsible for power supply and indicating the degree of heating. Due to them, the user will always be aware of what mode the device is operating in. The oil is heated to the required temperature within a few minutes, with the highest temperature being 190 degrees. The deep fryer has small overall dimensions (210x210x430 mm), so it will always have a place even in a small kitchen.

The thermal insulation of the body is well thought out, so the outer side of the device practically does not heat up while using the fryer. All removable parts can be washed in the dishwasher. Despite the device’s low power, which is only 840 W, this deep fryer is capable of preparing a fairly large volume of food within a few minutes. The oil container holds about one liter - this will be quite enough for potatoes or nuggets. One of the main distinguishing points of this device is the smooth, rather than stepwise (like most deep fryers) thermostat adjustment, so the food will not burn even if you forgot to take it out in a timely manner. The body has all the necessary pictograms, so even when using the deep fryer for the first time, it is unlikely that the dishes being prepared will be spoiled.

The thermal insulation of the case is good - the device can be placed in close proximity to other household appliances and plastic parts and not be afraid that it will lead to corrosion or other damage. Moreover, the outer casing will be cold all the time, so you can touch it with your bare hands, move it from one place to another, and so on, without using oven mitts. The set also comes with a special set for making fondue. The cover of the device is very convenient to use, as it is equipped with a special lock that allows you to secure it in both the closed and open positions. There is a special container for collecting condensate, and to protect against foreign odors, the design includes a triple filter of a non-separable type. At the back of the device there is a built-in compartment for storing the power cable.

  • A fondue cooking function is provided;
  • Aluminum bowl with food-grade non-stick coating;
  • The cover can be removed if necessary.

Flaws:

  • Fixed bowl;

Types of fryers

All devices can be divided into two groups: for home and industrial use. The former cannot withstand prolonged loads, but they are ideal for domestic use. Deep fryers with a removable bowl and in a one-piece design are divided into:

  1. By type
    – conveyor and batch operation.
  2. According to the installation method
    - floor and tabletop.
  3. According to the connection method
    - powered by gas and electricity.

Types of fryers

Kinds

First, you need to understand that deep fryers are available for home and industrial use. Household ones cannot withstand heavy loads, so they are not suitable for business. To cook on a large scale, you should select powerful, large equipment made from durable materials.

In professional deep fryers, the oil is heated to a certain temperature (90-190 degrees). The prepared product is placed in a special basket and lowered into a container with oil. Food does not burn during cooking, and odors of burnt fat do not penetrate into the product. Therefore, it retains its beneficial properties.

Not every deep fryer is suitable for this or that type of business, since devices come in different sizes, with different functions, etc. Therefore, it is recommended to study the types of such equipment before purchasing.

Here are the types of industrial fryers:

  1. By type of design: conveyor and periodic.
  2. By installation method: floor and tabletop.
  3. By connection methods: gas and electric.

Let's take a closer look at each type.

Conveyor and periodic

The conveyor fryer is designed in such a way that it operates continuously. A special conveyor is built inside, which constantly moves in heated oil. Products placed along the conveyor line are immersed in deep fat automatically. And in the same way they are removed from the oil. This type of equipment is used less frequently than others.

Intermittent designs are more common. In such deep fryers, the food ends up in the oil at the same time. Therefore, they are fried more evenly and removed in a friendly group.

Conveyor fryer

Batch fryer

Table and floor

Desktop models look compact and contain few raw materials. Therefore, they are used in small organizations: cafes, restaurants, where the menu does not include fries or they are prepared in small portions. In addition, tabletop fryers are installed in small spaces, in kitchens where there is no space to install a floor-standing unit. Small devices are cheaper and consume less electricity. In this case, productivity will be low.

Floor-standing options are more powerful and make it possible to process more dishes than tabletop ones in the same time. This type of deep fryer is used more often in large restaurants, fast foods, cafes, street kiosks, where the main activity is deep frying.

Tabletop fryer

Floor fryer

Gas and electric

If gas is supplied to the catering premises, you can install a deep fryer that connects to such a natural source. But if there is no gas, it is better to purchase electrical equipment, since special installation of a gas pipeline will be expensive.

These types have their pros and cons. Electric fryers take longer to heat up and, unlike gas fryers, are not able to reach a sufficient temperature in a short period. For this reason, many entrepreneurs prefer gas equipment. However, once an electric appliance reaches optimal heating, it recovers faster between frying cycles. And gas models “come to their senses” much more slowly.

When you look at operating costs, current electricity rates are much more expensive than gas rates. Therefore, you can save on gas equipment. Everyone has their own choice, but if you can’t decide, consult a professional before purchasing.

What can you cook in a deep fryer?

There is a wide range of dishes that can be prepared using deep frying, so the most popular include:

  • French fries;
  • meatballs and cutlets Kiev style;
  • donuts;
  • nuggets;
  • onion rings;
  • shrimp and squid in batter;
  • whites and chebureks;
  • cheese balls and more.

When figuring out what a deep fryer is, what you can cook in it and how, it is important to pay attention to some rules:

  1. Use only high-quality oil, which must be refined and free of impurities.
  2. One serving of oil is enough for no more than 7 servings of food.
  3. It is recommended to cut the products into equal pieces so that they cook evenly.
  4. If you are preparing frozen foods, you only need to fill the container 3/4 full. Thanks to this, the oil will not cool down quickly and the cooking efficiency will not decrease.
  5. When preparing dishes in batter, it is recommended to place a paper filter at the bottom of the container so that it attracts burnt particles.

What can you cook in a deep fryer?

How to choose the right deep fryer

When choosing a professional model, it is important to immediately pay attention to many parameters.

Let's tell you in more detail:

  1. The housing, containers and heating elements must be made of high-quality and safe materials. Stainless steel elements work best. Industrial devices are made from it. If you have any suspicions, look at the documentation for the equipment. It’s better to avoid the model with enamel baths. They can crack quickly.
  2. The capacity of the device depends on the planned volume of cooking. For a small restaurant, a tabletop version with a 4 or 5 liter bath will be sufficient. It will be inexpensive and will consume less electricity. In addition, small-sized models are easier to clean. If you cook a lot, consider offers with two baths with a volume of 4 to 15 liters. Modern deep fryers have a feature that allows you to set a different temperature for each vat. This way you can cook two types of dishes at once by filling the baths with different products.
  3. Choose oval or round bath shapes. These are easier to care for. It is recommended to choose the shape of the bath depending on the dishes that will be cooked in them. For example, a rectangular bathtub is good for frying fish; pies, donuts and pasties are best cooked in a wide and low container. And French fries are “not picky” in this sense - any bath will suit them.
  4. Opt for a deep fryer with a tap. All modern expensive models are equipped with such an element. Cheap devices may not have them. The oil drains through the tap. This is very convenient - you don’t have to drain it in other ways. If there is no tap, pay attention to the bowl. It will be good if it is removable. In this case, problems with oil drainage can also be avoided.

So, when purchasing a deep fryer for business, you should study the types, prices and functionality of the equipment. Only after that go to the store for it. It is not recommended to order expensive equipment on the Internet if it is not possible to view the device in advance.

How to choose a deep fryer for your home?

There is a wide selection of devices on the market that differ in their characteristics. It is important to know how to choose the right deep fryer:

  1. Power
    . One of the important parameters, since the rate of heating of the oil depends on it. The choice should be made based on the volume of the bowl. For example, if the container is designed for 1 liter of oil, then 1.2 kW is enough, and for a volume of 3-4 liters you need 2.2 kW.
  2. Frame
    . Cheaper are devices made of heat-resistant plastic, but it is better to give preference to models made of stainless steel.
  3. Inner bowl
    . This part of the device can be made of aluminum or stainless steel with an enamel or non-stick coating. For home use, a bowl with a volume of 1.2-4 liters is enough. It’s good if the mini-deep fryer has a removable bowl, which is convenient for washing.
  4. Basket
    . Choose a device that comes with this item. It is better to give preference to a basket made of stainless steel. Its handle should be made of heat-resistant material so that it does not heat up during use.
  5. A heating element
    . In higher quality devices it is a closed type, and in cheaper ones it is open.
  6. Filter
    . This element is important to prevent an unpleasant odor from spreading throughout the kitchen during cooking. Both a stationary metal filter and replaceable carbon options can be used. You can buy paper oil filters separately.
  7. Thermostat
    . The presence of this element helps maintain the temperature at the specified level.
  8. Temperature regulator and timer
    . In most models, you can set the heating temperature in the range of 50-190°C. Thanks to the timer, you can adjust the frying time.

Deep fryer rating

To choose the best device, it is recommended to rely on consumer reviews. The following models deserve attention:

  1. Kitfort KT-2023
    . The bowl volume is 3.3 liters. The housing is made of metal, and the control unit is located on a separate module.
  2. GFgril GFF-05
    . The working bowl is 2.5 liters, it is possible to regulate the temperature. The lid has an inspection window.
  3. Tefal FF 2200 Minifryer

How to choose a good deep fryer for your home

When deciding how to choose a deep fryer, you need to take into account factors such as the size of the kitchen, the functionality and cost of the model, its operating conditions, and the number of family members. The choice of deep fryer is usually influenced by the following points:

  • the power of the device, which determines the speed of cooking;
  • the volume of the container is important if you have to cook for a large company;
  • the presence of additional functions of the device, such as a timer, rotating bowl, filters, etc.;
  • the ability to simply and quickly disassemble the device, which greatly facilitates its cleaning;
  • fryer brand for home - equipment from a little-known manufacturer may turn out to be of poor quality.

How to use a deep fryer?

To get a tasty dish, you need to use the technique correctly. However, do not forget that hot oil is involved in cooking, which can cause burns. Instructions on how to cook in a deep fryer:

  1. Before first use, it is recommended to warm up the container, following the instructions provided by the manufacturer. Thanks to this procedure, you can rid the device of factory lubricant.
  2. You can plug in the device only after making sure that it is clean and dry.
  3. Pour in the oil, taking into account that there should not be more than half of it. Most manufacturers put a mark inside the bowl that you should follow. Many people think that this volume may not be enough, but its level will rise after immersing the food.
  4. You need to put the food in a special basket and carefully lower it into the oil when it reaches the required temperature.
  5. Having correctly installed the basket, close the lid and wait the time indicated in the instructions and necessary for cooking. Some models have a window in the body, which will help control the frying process.
  6. When the food is cooked, you need to lift the basket, allowing the oil to drain. After this, it is better to place the finished dish on paper towels so that they absorb excess fat.

A home deep fryer is a simple device to use, but it is important to use it correctly. For example, it is not recommended to cook a large number of pieces at a time, since they will not be able to fry properly. If there is no special basket for products, then they can be immersed in oil using a slotted spoon.

Safety precautions when working with a deep fryer

The fryer operating instructions recommend following basic safety rules:

  1. Before first use, the container of the kitchen appliance must be warmed up. This will eliminate any residual factory lubricant that may cause an unpleasant odor.
  2. When putting the deep fryer into operation, each time you need to check that the body, bowl and electrical plug of the device are clean and dry. Only after this the unit is connected to the network.
  3. A video on how to use a deep fryer shows that oil is poured into the device in a relatively small volume, no more than half, maximum two-thirds. Most models have a special mark inside the bowl. It must be borne in mind that when food is immersed in oil, it displaces it to the top; accordingly, it will simply overflow if the recommended quantities are exceeded.
  4. Products should also be placed in the device in small portions. If you fill the mesh too tightly with potatoes or pieces of fish and meat, the food will not be evenly saturated with oil on all sides and will not cook well.
  5. Cooking in a deep fryer is only possible with the lid closed. Leaving the appliance open will cause the oil to cool and slow down the cooking process. In addition, the risk of getting burns from hot splashes will increase.

After the products are completely cooked, they must first be placed on a paper towel to drain excess fat, and only then put on a plate and served.

Following simple rules will allow you to deep-fry the most healthy and tasty food. In addition, the kitchen unit will last longer if used correctly.

What is it for and how to use a deep fryer
Some deep fryers come with two baskets to allow you to cook different foods at the same time.

How to clean a deep fryer?

After the oil has been drained from the bowl, you can proceed to cleaning. There are certain tips on how to clean a deep fryer:

  1. You need to remove the container and remove dirt using a sponge and detergent.
  2. If food remains cannot be removed, it is recommended to pour water into the bowl and leave for a while. After a couple of hours, dirt can be easily removed. At the end of cleaning, the container should be rinsed and wiped dry.
  3. If the bowl is not removable, then you need to use this method: fill the bowl 2/3 with warm water and add 50-70 mg of detergent. To speed up the process, you can send another 2-3 tbsp there. spoons of 9% vinegar or citric acid.
  4. It is important to wash both the outside of the bowl and the body, removing any remaining grease. It is recommended to use a paper towel or soft sponge for this.

How to clean a deep fryer

Typically, such a device is used infrequently in domestic conditions, and the housewife can simply clean it after each frying. When equipment is used frequently, it is worth changing the oil regularly and thinking about regular cleaning after a certain number of days. Otherwise, it will be difficult to remove the deposits that have appeared from the old oil.

Since such units come with removable and non-removable bowl options, they should be washed in different ways.

You should be aware that the device itself cannot be washed directly under running water or in a dishwasher - this can lead to a short circuit.

Before the washing process, you must unplug the device and wait until it cools down. Hot oil can seriously burn, especially if it comes into contact with water. Remains of food in the bowl should not be scraped off with a knife or a hard brush - this can damage the coating. Used oil should not be poured down the drain - this will clog the pipes.

With removable bowl

Fortunately, similar products are produced by most manufacturers - such a device will be much easier to clean from grease.

  1. Remains of food are removed with a damp cloth. Particularly stuck fragments should be cleaned with a silicone scraper (this must be done carefully).
  2. The cooled bowl is pulled out and filled with boiling water. A drop of dishwashing detergent or two tablespoons of regular vinegar is also added here. Everything is left for several hours.
  3. If limescale has formed on the machine tools, it can be easily removed with a sponge soaked in a 5% vinegar solution. After this, the residue can be easily removed with a paper napkin.
  4. The food basket removed from the deep fryer should also be washed in the sink (after it has soaked a little, moistened with a few drops of detergent).

Removable fryer

Fixed option

A deep fryer with a fixed bowl should be washed differently. First the fat is drained. Its remnants can be removed with a paper napkin (but not with a sponge - it will only smear). You need to start wiping from the bottom, using circular movements, moving to the walls. Then warm water is poured into the container and gel is added, which the housewife uses to wash the dishes. Everything is left to “sour” for half an hour.

After half an hour, the water with the product is heated in the device. In case of severe contamination, it should be boiled for several minutes. The water is drained and the container itself is wiped dry. You should check the bowl: if there are traces of oil left in it, fill it with water again and add 1-2 tablespoons of vinegar. Now you should boil for 5 minutes, after which the water is drained and the bowl is wiped dry.

Completely “old” fat will have to be removed by boiling water with grated laundry soap. The procedure time is 15-20 minutes.

There is another way: combine baking soda and vinegar, pour the effervescent mixture into the deep fryer and bring to a boil.

Once every 2-3 months of intensive use, you should wash the heating element and clean the filters. Don’t forget about the outer surface - the body should be cleaned of stains using a sponge and detergent. However, you should strictly ensure that no moisture gets on the wires and buttons. After completing the procedure, wipe the device dry with a paper towel both outside and inside.
