Types and types of slicers

Slicers are divided into 2 main groups:

  • professional (industrial);
  • household (household).

Based on the type of drive and control, they are divided into manual (lost their relevance) and electric, which, in turn, can be semi-automatic or fully automated.

All electric slicers, working on the same principle, have different design features, ranging from the quality of materials, reliability of parts and ending with external design.

In addition to the fact that the drive of electric knives can vary in power, and automatic models have different performance, slicers also differ:

  • the type of knives supplied in the kit (straight with classic sharpening, wavy for products with different densities, serrated for bread and Teflon-coated for cheese);
  • the location of the cutting disk (vertical and gravitational, when the knife is located at an angle of less than 90° and the cutting itself falls onto the tray under the influence of gravity);
  • feeding carriages (there are floating ones, placed at an angle to the circular knife, for slicing fish fillets);
  • various additional functions and components.

Dice

They can be completely different sizes.

Brunoise - small cubes with an edge of 1-3 mm.

Fine brunoise or sisle (fine brunoise, cisele) are even smaller cubes than brunoise.

Medium cubes are cubes with an edge of 5-7 mm. They are also called “Macedonian”.

Large cubes - cubes with an edge of 8 mm - 1 cm or more.

Rating of industrial slicers

When choosing an industrial slicer, you need to take into account not only the price and degree of automation, but also pay attention to the following characteristics:

  • dimensions (will it be convenient to place it in a small cafe);
  • power and cooling of the electric drive (the service life of the device and the duration of the daily workload depend on this);
  • performance of automatic electric knives;
  • location of the cutting disc;
  • upper limit of slice thickness;
  • availability of additional devices.

Straw

It can also be completely different - the thickness and length of the straw are taken into account.

Julienne is a small straw 3-4 cm long and 1-3 mm thick.

Consider the size of the knife - you do not need to use a 25-centimeter chef's knife if you are cutting using the brunoise method or small strips - a small knife will do for these purposes.

Battonnet is a large straw 2-3 cm long and 3-4 mm thick.
